If you check out John Kim's F-14A build here on SPAM, he used them in his cockpit - they look bloody amazing (Mind you, John's builds always do!)

I'm using their cockpit set for a Bf-109E-7 Tropical build on which I'm working now. My model is the 1/48 Hobbycraft kit and their set is made for the Eduard version, so I had to make a modification or two. Here's a quick look at the IP:
The detail is amazing. I was able to assemble the cockpit without knocking off any of those four tiny levers...yet, that is. The completed pilot's office; but please disregard the trim wheels. That old macro mode showed them looking like I had chewed them off the sprues. I've since removed them and cleaned them up considerably. I also used Quinta's seat harnesses. I found them to get quite brittle after just a bit of handling; two broke into several pieces while manipulating them and had to be pieced back together. Work quickly with those!

So do you have to actually dip these things in water, or are they just self-adhesive?

I’d been wondering about using those Quinta decals on kits that they were not designed for. Gary, you just answered that question!

For me the 1/32 stuff is pricey, but I might check out the 1/48 stuff on a future build

Those Quintas indeed are something extraordinary!
I was not even aware of that my LHS sells them.
Some are pretty expensive indeed..
But cool cool stuff!
