I wonder if they had wooden planks on the undersides of the Shermans as well to repel the magnetic mines as they go over them?

There is no indication of that in any reference.
I think that the immediate threat of a suicidal soldier carrying a magnetic mine outweighed the chance of passing over one. The Japanese used torpedo warheads and aerial bombs for land mines. That's 1700 and 550 pounds of explosives respectively.
No amount of plywood can protect against that.
