I didn't cut up any onion for some reason. I need to get me some of that pepper sauce. It was the first time, I think, using salt port. I like it. They were good.

That's the secret ingredient, imho. Gotta have some in any pot o' beans!

Usually I use smoked hocks. Salt pork would be awfully good in a pot of collards, too!

guarantee that. With cornbread and onions, a big bowl full of collard (or any other greens, really) greens is a one-dish meal!
