Stuart, Taco Bell is a fast food Mexican restaurant chain... been around for decades...
Tex Mex food can be categorized as a blend of styles in food, not true Mexican, but not south western US either. There are also regional Mexican foods also seeing how Mexico has coastal areas with lots of sea food, as well as inland areas with cattle ranches, not to mention the other regional crops...

When we were in China in 2014, a few of us found a Mexican place in Guangzhou. Very, very good. Tacos el Pastor were wonderful. I've become a big fan of this stuff. If the black label is too hot, the yellow label is very good but not as hot

Years ago I use to make it a point to make a fuel stop at Winslow on the way to Texas just for the Mexican food at the restaurant there. It was also mid point more or less on the route, but that was beside the point.
